At the end of the 60s the Mayor of Poggio a Caiano, Giacomo Caiani, realized that the full tourism potential of Poggio a Caiano could not just rest on the Medici connection and the Villa Ambra. To satisfy the visitor’s tourist or work needs the town needed its own hospitality facilities . He persuaded Silvano and Gilberto Finocchi, prominent owners of a knitwear factory, to invest in the construction of a hotel on the hill of Bonistallo, perhaps the most beautiful and panoramic area of Poggio. The Finocchi brothers bought the land on which they began to build the hotel in 1969. This area was considered rural: there were very few buildings and the road leading to the hotel was still unpaved at the time of its construction. The hotel, aptly named Hermitage, opened in July 1970.
The original building consisted of 28 rooms, a restaurant and a room for meetings, parties and banquets. The swimming pool was opened a few years later.
In 1986 a new wing was built, 31 rooms
